This is another recipe we've been making in our family every summer when there's lots of fresh cucumber and parsley. Hot house cucumbers, or English cucumbers as they are also called, are the long skinny cucumbers you see at the supermarket. I have never tried to make this with another variety, so can't say how an American cucumber would do here..
Serve these thinly sliced, pickled cucumbers as a condiment with dinner or on your open faced sandwich. They are especially good on meatloaf sandwich!
PICKLED HOT HOUSE CUCUMBER
What you need..
1 hot house cucumber
3 tablespoons spirit vinegar, 10% strength
2 tablespoons sugar
6 tablespoons or 1 dl water
1 pinch white peppar
1/4 teaspoon salt
finely chopped parsley
1.Slice the cucumber thinly with a cheese slicer or a mandolin slicer.
2. In a small bowl mix together the rest of the ingredients, add the cucumber and parsley.
3. Add a small plate on top of cucumber making sure it sits under the vinegar mixture.
Wait for a couple of hours and they are done, that's it! Very easy to make and they're done in an instant.
